Smoked Lamb in Blankets

For some reason many of us reserve this treat for your Christmas roast. Maybe they are easy to forget? But this year you can make it your goal to make this throughout the year. With this fresh and flavourful recipe you will be making it all year round. Smoked Lamb in Blankets, takes inspiration from the more traditional Pigs in blankets but with several optional twists to elevate your Christmas Roast to the next level.

Ingredients

- 250g Minced Lamb

- 1 dried lamb stock cube, optional

- ½ tsp Mint (fresh of dried, use more if fresh)

- ½ tsp smoked paprika

- 100g grated Smoked Applewood cheese (or your favourite smoked cheese)

- 1 egg

- 8 rashers of bacon (not streaky bacon)

Equipment

- A baking tray

- 1/2 tsp measure

- A Large Bowl

Method

1) Set your oven at 200C/ fan 180C/ gas 6

2) Tip the meat into a clean bowl and add all the herbs and cheese, then mix to incorporate. I normally use my hands for this part.

3) Add the egg into the bowl and mix again.

4) Divide the mixture into 8 and put each piece on the baking tray. Then shape them into a sausage shape.

5) Wrap each piece using one piece of bacon

6) Place in the oven for 20 minutes, once cooked serve.

If you want to experiment with this recipe, try a different combination of stock, herbs and spices. You could even switch out the meat if you’re feeling adventurous. A mint sauce works really well with this recipe, but can dull the flavours a bit, so use sparingly. If you reached this point, I would love to find out how yours went.
